Pecan & Date Pie

Ingredients


1 pie crust


1/2 cup brown sugar


1 teaspoon salt


1/2 cup (1 stick) unsalted butter, melted


1/2 cup light corn syrup


1/2 cup maple syrup


1 tbsp bourbon


4 eggs


1 teaspoon vanilla extract


1 cup Medjool dates, , pitted and coarsely chopped


1 ½ cups pecans, , coasely chopped


Preparation Steps


1. Line a 9-in. pie plate with pastry; trim and flute edges. Line pastry shell with foil and fill with pie weights/beans. Bake at 450° for 8 minutes. Remove foil; bake 5 minutes longer or until lightly golden. Cool on a wire rack.


2. Mix the sugar, butter, corn syrup, maple syrup, bourbon, and salt in a pot. Heat on the stove until all ingredients are combined, then boil for 1 minute. Remove from heat and let stand for (at least) 5 minutes (not until cold, just cool enough to not scramble the eggs).


3. Whisk the eggs into the sugar butter mixture. Stir in vanilla, dates & pecans.


4. Pour the nut mixture into the pie plate.


5. Bake in a preheated 350F/180C oven until set, about 40-50 minutes.


Notes


Recipe modified from original based on various Food Wishes pecan pie recipes. Also: It may need more than 1 ½ cups pecans. Put in as much as you can!
